Quick Veggie Breakfast Bake


Shopping & Ingredients List:

200g large Mushrooms

2 large Tomatoes, halved

200g Spinach

2 tbsp Olive Oil

4 large Eggs

Salt & Pepper to own taste

Method

1. Preheat oven to 200c (180 fan), 400f, Gas Mark 6.

2. Divide the mushrooms & tomatoes evenly between two oven proof dishes. Drizzle olive oil over them. Season & bake for 10 mins.

3. Boil kettle. Pour boiling water over the spinach to wilt. Squeeze out excess water. Add the spinach to the dishes.

4. Make a little well in the vegetables for each egg. Crack eggs. Return to oven to bake for a further 8-10 mins.
